Rustic Tomato Bruschetta: A Taste of Tuscany

Ingredients
  

  • 400g Tomatoes (diced small)
  • 1/2 Red onion (diced small)
  • 1 tbsp Garlic infused olive oil
  • Basil (handful, chopped)
  • Large French baguette (cut into 8x 1inch slices)
  • Garlic clove (cut in half)
  • 3 tbsp Sunflower oil
  • Basil (handful)
  • Balsamic vinegar (optional, to serve)
  • Grated Grana Padano cheese (or any hard cheese of your liking) optional, to serve

Instructions
 

  • Preheat grill to medium-high. Add the tomatoes, red onion, olive oil and basil to a large bowl and toss until combined. Season with salt and pepper to taste.
  • Toast the slices of baguette under the grill for 1-1 1/2 minutes per side until golden brown. Rub the garlic clove over each slice of bread on one side.
  • Heat the sunflower oil to medium. Add the basil and fry for 30 seconds- 1 minute until crispy and dark green. Remove from heat and place on kitchen paper to remove excess oil, season with a pinch of salt.
  • Top the baguette slices with the tomato mixture and fried basil. You can add a drizzle of balsamic vinegar if you like and hard grated Italian cheese.
