Vegan Mexican Fries Made Simple in the Air Fryer

Vegan Mexican loaded fries with salsa, black beans, onion, spring onion, chillies, jalapenos and a spicy vegan-mayo dressing.

Ingredients
  

  • 435g Maris piper potatoes (cut into fries)
  • 2 tbsp Vegetable oil
  • 1 tsp Paprika
  • 1/2 tsp Chilli powder
  • 1/2 tsp Onion granules
  • 1/2 tsp Cumin
  • 1/2 tsp Garlic granules

Spicy Dressing

  • 2 tbsp Vegan mayonnaise
  • 1 tbsp Mexican hot sauce

Garnish

  • 25g Black beans
  • 2 Spring onions (chopped)
  • 1/2 Onion (diced)
  • 1 Red chilli (sliced)
  • 50g Pickled Jalapenos
  • 2 tbsp Salsa
  • 1/2 tsp Coriander

Instructions
 

  • Preheat air fryer to 190. Cut the potatoes into fries and add to a pan with boiling water with a pinch of salt. Boil for 3 minutes and then drain in a colander. Place on kitchen towel to remove excess moisture.
  • In a large bowl add the oil, paprika, chilli powder, onion granules, cumin, garlic powder and salt and pepper to taste. Mix until combined and toss the fries until well coated. Add to the air fryer and cook for 12-15 minutes, turning the fries half way through.
  • Meanwhile, add the black beans to a small pan and add cold water covered. Heat the beans on low for around 5 minutes until warmed through (do not boil). Drain and set aside.
  • For the dressing, mix the vegan mayonnaise and Mexican hot sauce in a small bowl until combined.
  • Remove the chips from the air fryer and place in a large serving bowl. Top with the black beans, spring onions, onion, red chilli, jalapenos and salsa. Drizzle the spicy dressing over the fries, sprinkle with coriander and enjoy.
