Vegan BBQ Bean Loaded Nachos
Ingredients
- 80g Tortilla chips
BBQ Beans
- 200g Baked beans
- 1/4 cup Tomato ketchup
- 1 tbsp Vinegar
- 1 tbsp Worcestershire sauce
- 1 tbsp Honey
- 1/2 tbsp American mustard
- 1/2 tsp Garlic granules
- 1/2 tsp Chilli powder
- 1/2 tsp Mexican hot sauce
Spicy Dressing
- 1 tbsp Vegan plain yoghurt
- 2 tsp Mexican hot sauce
- 1 tsp Lime juice
Nacho Toppings
- 2 tbsp Guacamole
- 2 tbsp Salsa
- 30g Picked jalapenos
- 2 Spring onions (sliced)
- 1 Red chilli (sliced)
- 1 tsp Coriander (herb)
Instructions
- Add the nachos to a small bowl. Add the baked beans, ketchup, vinegar, Worcestershire sauce, honey, American mustard, garlic granules, chilli powder and Mexican hot sauce to a small sauce pan. Heat on medium for 5 minutes, stirring frequently until the sauce thickens. Season with salt and pepper to taste.
- Meanwhile, add the yoghurt, hot sauce and lime juice to small bowl and stir until combined. Set aside.
- Add the BBQ beans on top of the nachos and then top with the guacamole, salsa, jalapenos, spring onions and red chilli. Drizzle on the spicy dressing and sprinkle with coriander to serve.
