Quick and Easy BBQ Pulled Pork Sweet Potato Fries
Pulled pork sweet potato fries with BBQ pulled pork and melted cheese. Topped with pickled jalapenos, pickled red onions, diced onion, crispy onion and spring onion. Finished with a drizzle of American mustard.
Ingredients
- 1/2 Red onion (thinly sliced)
- 4 tbsp Red wine vinegar
- 435g Sweet potatoes (cut into fries)
- 250g Pulled pork (see below)
- 2 tbsp Barbecue sauce
- 150g Grated cheese (I used cheddar)
Garnish
- 4 Spring onions (chopped)
- 2 tbsp Crispy onions (see below)
- 1/2 Small red onion (diced)
- 50g Pickled jalapenos (diced)
- American mustard (optional)
Instructions
- Preheat your air fryer to 190℃ and preheat your grill to medium-high. Cut the sweet potatoes into fries and add to a pan with boiling water with a pinch of salt. Boil for 3 minutes and then drain in a colander. Place on kitchen towel to remove excess moisture. Add to the air fryer and cook for 12-15 minutes, turning the fries half way through.
- Meanwhile, add the red onion to a small bowl and add the red wine vinegar. Add a pinch of salt and leave to pickle, stirring frequently.
- Add the pulled pork to a small sauce pan and add the BBQ sauce. Cook on medium for 5 minutes, stirring frequently, until the pork is warmed through. (You can use leftover pulled pork and bottled barbecue sauce or follow my recipe Slow Cooker Barbecue Pulled Pork Sandwich if you want to make them both from scratch).
- Remove the sweet potatoes from the air fryer and divide them between two bowls. Season with salt and pepper to taste. Add the pulled pork and grated cheese and cook under the grill for 3-5 minutes until the cheese has melted.
- Drain the pickled red onions and add to the top of the fries. Add the spring onions, crispy onions (either shop-bought or follow the instructions for crispy onions on my Pepperoni and Ham Sandwich recipe), diced red onion and pickled jalapenos. Drizzle with American mustard and enjoy.
