The Ultimate Black Lentil Curry: Easy and Delicious
Ingredients
- 1 tbsp Olive oil
- 1 Onion (thinly sliced)
- 1 Thumb-sized piece of ginger (grated)
- 2 Garlic cloves (crushed)
- 1/2 tbsp Turmeric
- 1/2 tbsp Chilli powder
- 1/2 tbsp Cumin
- 1/2 tbsp Ground coriander
- 1/2 tbsp Garam masala
- 1/2 cup Tomato puree
- 100ml Double cream
- 400g Canned black lentils
To Serve
- 2 tbsp Double cream
- Fresh coriander
Instructions
- Heat the oil in a large saucepan on medium-high. Add the onion and cook for 5 minutes, stirring constantly, until browned.
- Add the ginger, garlic, turmeric, chilli powder, cumin, ground coriander and garam masala. Cook for a minute stirring constantly. Then add the tomato puree and cook for a further minute.
- Add the black lentils with its liquid to the pan and season with salt and pepper to taste. Cook for 10 minutes on a medium heat stirring frequently. Add the double cream and lower the temperature to low, Cook for 5 minutes until warmed through. Remove from the heat and serve with rice or naan bread. Drizzle with the extra double cream and sprinkle with fresh coriander and enjoy.
