The Ultimate Chicken Tikka Sandwich Recipe
Chicken tikka sandwich with onion bhajis, red onion, lettuce and a mint and yoghurt dressing.
Ingredients
Chicken Tikka
- 1/2 tbsp Garlic granules
- 1/2 tbsp Ginger powder
- 1/2 tbsp Garam masala
- 1/2 tbsp Ground coriander
- 1/2 tbsp Ground cumin
- 1/2 tbsp Turmeric
- 2 tbsp Tomato puree
- 1/2 cup Natural yoghurt
- 1 Chicken breast (cut into small chunks)
- 1 tbsp Olive oil
Ingredients
- 2 Bread buns
- 4 tbsp Plain yoghurt
- 1 tbsp Mint sauce
- 50g Lettuce (shredded)
- 1/2 Red onion (sliced)
- 2 Onion bhajis (leftovers- cut in half)
- Fresh coriander (to serve)
Instructions
- In a small bowl mix together the garlic, ginger, garam masala, ground coriander, ground cumin, turmeric and tomato puree. Add a pinch of salt and add in the yoghurt and chicken, mix until well combined.
- Heat the oil in a large pan to medium-high. Add the chicken and cook for 6-8 minutes, stirring frequently, until cooked through and the juices run clear. Set aside.
- Meanwhile, cut the bread buns in half and lightly toast. Mix the plain yoghurt and mint sauce in a small bowl and then spread across the top and bottom of the bun lids. Add the shredded lettuce and red onion.
- Top with the chicken tikka and onion bhajis (you can warm these through if you like). Then add fresh coriander and enjoy.
