How to Make the Best Chicken Fajita Pasta
Chicken fajita pasta with peppers, onions, mushrooms, coriander and parmesan.

- 200g Penne pasta
- 1 tbsp Olive oil
- 2 Chicken breasts (cut into bite sized chunks)
- 1/2 Red pepper (sliced)
- 1/2 Red onion (sliced)
- 100g Mushrooms (sliced)
Fajita Seasoning
- 1/2 tsbp Chilli powder
- 1/2 tbsp Paprika
- 1/2 tbsp Cumin
- 1/2 tbsp Cayenne
- 1/2 tbsp Garlic granules
- 1/2 tbsp Onion granules
- Lime juice (dash)
- 2 tbsp Tomato puree
Garnish
- 2 Spring onions (chopped)
- Fresh coriander (handful)
- Parmesan cheese
Instructions
- Cook the penne pasta according to the packet instructions (around 9-12 minutes). Drain when cooked, but keep a couple of splashes of pasta water aside.
- Meanwhile, heat the olive oil in a large pan to medium-high heat. Add the chicken and cook for 5 minutes, turning frequently until browned. Then, add the red pepper, red onion and mushrooms and cook for a further 3-4 minutes, stirring frequently.
- Next, add the chilli powder, paprika, cumin, cayenne, garlic granules, onion granules, lime juice and tomato puree. Season with salt and pepper to taste. Cook for a further minute, stirring constantly. Add the pasta and pasta water and cook for 2 minutes until combined and warmed through.
- Divide between two pasta bowls and top with the spring onions, fresh coriander and parmesan cheese. Serve and enjoy.
