How to Make the Best Curried Swede Soup at Home

Homemade curried swede soup. Served with yoghurt, chilli flakes and dried parsley.

Servings 2 people

Ingredients
  

  • 1 tbsp Olive oil
  • 1 tbsp Butter
  • 1/2 Onion (sliced)
  • 1/2 tbsp Ginger puree
  • 1/2 tbsp Garlic puree
  • 1 tsp Turmeric
  • 1 tsp Ground coriander
  • 1 tsp Cumin
  • 1 tbsp Mild curry powder
  • 800ml Vegetable stock
  • 1/2 Swede (cut into small dices)

To Serve

  • 2 tbsp Plain yoghurt (optional)
  • Chilli flakes (optional)
  • Dried parsley (optional)

Instructions
 

  • Add the olive oil and butter to a large saucepan and heat to medium-high. Then, add the onion and cook for 3 mintues stirring cosntantly.
  • Next, add the ginger, garlic, turmeric, ground coriander, cumin and mild curry paste. Cook for a further minute stirring constantly. Add the chicken stock and season with salt and pepper to taste. Then, add the swede and bring to a boil. Reduce the heat to medium and cook for 25 minutes until the swede is tender.
  • Add to a blender and blend until smooth. Serve between two soup bowls and stir in the yoghurt if using and sprinkle with chilli flakes and dried parsley (optional).
