How to Make the Best Curried Swede Soup at Home
Ingredients
- 1 tbsp Olive oil
- 1 tbsp Butter
- 1/2 Onion (sliced)
- 1/2 tbsp Ginger puree
- 1/2 tbsp Garlic puree
- 1 tsp Turmeric
- 1 tsp Ground coriander
- 1 tsp Cumin
- 1 tbsp Mild curry powder
- 800ml Vegetable stock
- 1/2 Swede (cut into small dices)
To Serve
- 2 tbsp Plain yoghurt (optional)
- Chilli flakes (optional)
- Dried parsley (optional)
Instructions
- Add the olive oil and butter to a large saucepan and heat to medium-high. Then, add the onion and cook for 3 mintues stirring cosntantly.
- Next, add the ginger, garlic, turmeric, ground coriander, cumin and mild curry paste. Cook for a further minute stirring constantly. Add the chicken stock and season with salt and pepper to taste. Then, add the swede and bring to a boil. Reduce the heat to medium and cook for 25 minutes until the swede is tender.
- Add to a blender and blend until smooth. Serve between two soup bowls and stir in the yoghurt if using and sprinkle with chilli flakes and dried parsley (optional).
