This creamy Cajun chicken pasta makes the perfect lunch or dinner. It’s packed full of flavour and ready in only 30 minutes. It’s real comfort food and is a crowd pleaser!

Additionally, penne pasta works really well with this recipe as well. Furthermore, if you don’t like too much spice you can use regular Cajun seasoning instead of extra spicy.

Cajun Chicken Pasta

Cajun chicken tagliatelle pasta with a creamy Cajun sauce

Ingredients
  

  • 85g Tagliatelle pasta

Cajun Chicken

  • 1 tbsp Coconut oil
  • 1 Chicken breast
  • 1 tbsp Plain flour
  • 1 tbsp Extra spicy Cajun seasoning

Creamy Pasta Sauce

  • 1 tbsp Coconut oil
  • 20g Jarred pickled jalapenos (diced)
  • 1/2 Red onion (diced)
  • 1/2 Green pepper (diced)
  • 1/2 Red pepper (diced)
  • 2 tsp Extra spicy Cajun seasoning
  • 1/2 tsp Garlic granules
  • 20g Butter
  • 100ml Milk
  • 3 tbsp Parmesan

To serve

  • 1 tsp Flat leaf parsley

Instructions
 

  • Cook tagliatelle according to packet instructions (around 8-10 minutes). Drain but keep pasta water.
  • Meanwhile, wrap the chicken breast in clingfilm and hit it with a rolling pin to flatten it a little and make the chicken breast even. Mix the flour, Cajun seasoning, and salt and pepper to taste in a bowl until well combined. Add the chicken breast to the bowl and rub the chicken until well coated. Heat coconut oil in a frying pan to medium-high and cook the chicken for 4-5 minutes on each side, until cooked through and the juices run clear.
  • Meanwhile, heat 1 tbsp coconut oil in a pan to medium-high. Add the jalapenos, red onion and peppers and cook for 3-4 minutes until beginning to soften. Add the Cajun seasoning, garlic granules and salt and pepper to taste and fry for a further minute, stirring continuously.
  • Add the butter, milk and a few splashes of leftover pasta water, lower the heat to medium and allow to simmer for 2 minutes. Add the pasta and stir through the sauce until well coated. Reduce heat to low and add the parmesan, stirring until well combined.
  • Add the pasta to a large bowl, slice the chicken breast and place on top of the pasta. Sprinkle with flat leaf parsley and enjoy.
