Vegan Cauliflower Wings with Spring Onions and Spices
Ingredients
- 1 Small head cauliflower (broken into small florets) or use 1/2 large cauliflower
- 4 tbsp Maple syrup
- 3 tbsp Light soy
- 2 tbsp Mirin (you can use apple cider vinegar with a pinch of sugar)
- 1/2 tsp Cayenne pepper
- 1/2 tsp Paprika
- 1/2 tsp Onion powder
- 1/2 tsp Garlic powder
To Serve
- 2 Spring onions (thinly sliced)
- 1 tbsp Toasted sesame seeds
- 1 tsp Chilli flakes
Instructions
- Place the cauliflower in a large bowl, add the maple syrup, light soy, mirin, cayenne pepper, paprika, onion powder, garlic powder and salt and pepper to taste. Leave to marinade for at least 20 minutes.
- Meanwhile, preheat the oven to gas mark 6/200℃/400℉ and line a large baking tray with grease-proof paper. Remove the cauliflower from the marinade and spread evenly across the baking tray. Cook for 20 minutes at the top of the oven.
- Put the remaining marinade into a small saucepan and cook on medium for 2-3 minutes, until slightly thickened and a syrup like consistency. Remove the cauliflower from the oven after 20 minutes and brush the wings with the marinade mixture. Return to the oven and cook for a further 5 minutes.
- Serve with spring onions, sesame seeds and chilli flakes sprinkled over the wings.
