Chicken Tostadas: The Recipe You’ll Keep Coming Back To
Ingredients
Mexican Chicken
- 1 tbsp Olive oil
- 1 Chicken breast (cut into small bite-sized pieces)
- 1/2 tbsp Cayenne
- 1/2 tbsp Chilli powder
- 1/2 tbsp Cumin
- 1/2 tbsp Ground coriander
- 1/2 tbsp Paprika
- 1/2 tbsp Garlic granules
- 1/2 tbsp Onion granules
- Lime juice (a couple of dashes)
Tostada Ingredients
- 3 Taco wraps
- Fry light spray
- 50g Pickled jalapenos (chopped)
- 2 Salad tomatoes (chopped)
- 2 Spring onions (chopped)
- 1 Red chilli (sliced)
- Lime juice (dash)
- 50g Lettuce (shredded)
- 50g Feta cheese (crumbled)
- 1 tsp Dried coriander
Spicy Dressing
- 2 tbsp Mayonnaise
- 1 tbsp Mexican hot sauce
- Lime juice (dash)
Instructions
- Heat the oil to medium-high in a frying pan. Then, add the chicken and cook for 5 minutes, turning frequently. Next, add the cayenne, chilli powder, cumin, ground coriander, paprika, garlic granules and onion granules. Cook for a further minute stirring constantly. Add the lime juice and season with salt and pepper to taste. Cook for another 3-4 minutes until the chicken is cooked through. Then set aside.
- Meanwhile, preheat your air fryer to 180℃. Spray the taco wraps on each side with fry light spray. Add a taco wrap at a time and cook for a couple of minutes until golden brown and crispy then place on your serving plate.
- In a small bowl add the pickled jalapenos, salad tomatoes, spring onions, red chilli and lime juice. Season with salt and pepper to taste and mix until well combined. Add the lettuce to the taco wraps and then top with the cooked chicken. Add the mixed vegetables to the top and then sprinkle with feta cheese and dried coriander.
- Mix the mayonnaise, Mexican hot sauce and lime juice together in a small bowl and then drizzle on top of the tostadas. Serve immediately and enjoy.
