Crispy Air Fryer Chicken Taquitos Made Easy
Ingredients
- 2 Chicken breasts
- Lime juice (couple of dashes)
- 1/2 tbsp Chili powder
- 1/2 tbsp Cumin
- 1/2 tbsp Garlic granules
- 1/2 tbsp Paprika
- 8 Taco wraps
- 1 cup Grated cheese (I used red Leicester)
- Fry light oil
- 1/2 Lettuce head (shredded)
Pico de Gallo
- 3 Salad tomatoes (diced)
- 1/2 Brown onion (diced)
- 2 Green chilies (sliced)
- Fresh coriander (handful- chopped)
- Lime juice (couple of dashes)
Instructions
- Preheat the air fryer to 180℃. Add the chicken breasts to a small saucepan and add cold water until the chicken is just covered. Bring to the boil and then lower the heat to medium-high. Cook for around 10 minutes until the chicken is cooked through. Drain the water and shred the chicken with two forks.
- Add the lime juice, chili powder, cumin, garlic granules, and paprika to the chicken. Season with salt and pepper to taste and mix until well combined.
- For each taco wrap, add a handful of cheese, shredded chicken, and another handful of cheese on top. Roll into a tight tube shape and seal with water at the end. Repeat for each taco wrap. Lightly spray each taquito with fry light spray and place them gently folded side down into your air fryer. Cook for 10 minutes until crispy and the cheese has melted.
- Meanwhile, add the tomatoes, onion, green chilies, coriander, and lime juice to a small bowl. Season with salt to taste and mix until well combined.
- Add the lettuce to two large bowls and top with the taquitos. Add the Pico de Gallo to the top of the taquitos and enjoy. You can serve them with salsa, guacamole, and sour cream if you like.
