Delicious Rolo Cookies Made Easy
Easy homemade Rolo cookies.
Ingredients
- 300g Plain flour
- 1 tbsp Cornflour
- 1/2 tsp Salt
- 1/2 tsp Bicarbonate of soda
- 115g Unsalted butter (melted)
- 200g Granulated sugar
- 1 Egg (medium)
- 1/2 tsp Vanilla extract
- 250g Rolos
Instructions
- Preheat oven to gas mark 5/190℃/375℉ and line 2 baking trays with grease-proof paper and set aside.
- Mix the flour, cornflour, salt, and bicarbonate of soda in a mixing bowl. In a separate mixing bowl, add the melted butter and sugar. Whisk for 1-2 minutes until well combined. Add the egg and vanilla and whisk again for a further minute.
- Add the dry ingredients to the wet ingredients and mix until a firm cookie dough texture is achieved. Add the Rolos and mix gently into the cookie dough evenly.
- Divide the mixture into 10-15 small balls and press down onto the grease-proof paper/baking trays. Ensure you leave gaps between the cookie dough balls as they will spread whilst cooking. Bake in the oven for 12-15 minutes, until they are golden brown. Allow to cook on a wire rack and enjoy.
