Furthermore, they are simple to make and only take 30 minutes to cook in the oven. However, you can use an air fryer for half the time if you are in a hurry. Moreover, you can use chicken thighs if you prefer for this recipe.
Make it Vegan
Simply use your favourite vegan-friendly chicken pieces or substitute for sweet potato or any vegetable of your choice. Or, tofu would be a perfect alternative for the chicken in this recipe.

Easy Mexican Chicken Skewers: A Quick and Tasty Meal
Ingredients
- 2 Chicken breasts (cut into chunks)
- 1/2 tbsp Cayenne pepper
- 1/2 tbsp Paprika
- 1/2 tbsp Cumin
- 1/2 tbsp Ground coriander
- 1/2 tbsp Dried oregano
- 1/4 tbsp Garlic granules
- Fry light spray
- 150g Mushrooms (cut into chunks)
- 1/2 Red pepper (cut into chunks)
- 1/2 Yellow pepper (cut into chunks)
- 1/2 Green pepper (cut into chunks)
- 1 Red onion (cut into chunks)
Instructions
- Preheat the oven to gas mark 5/190℃/375℉. Add the chicken to a bowl and add the cayenne pepper, paprika, cumin, ground coriander, dried oregano, and garlic granules. Season with salt and pepper to taste and toss the chicken until well combined.
- Use 4 metal skewers and skewer a piece of chicken and push to the bottom of the skewer. Then add a piece of mushroom, bell pepper and then red onion. Repeat until the skewer is full and repeat for all 4 skewers. Spray each skewer on all sides with fry light cooking spray and then place onto a baking tray.
- Cook in the oven for 15 minutes and then turn the skewers over and cook for a further 15 minutes, until the chicken is cooked through. Serve with your choice of side and enjoy.
