pepperoni tagliatelle

Easy Pepperoni Tagliatelle with a Kick

Easy pepperoni tagliatelle pasta made with onions, peppers, mushrooms, chilies and pickled jalapenos.

Ingredients
  

  • 200g Tagliatelle pasta
  • 1 tbsp Olive oil
  • 120g Hot pepperoni slices (diced)
  • 1/2 Onion (sliced)
  • 1/2 Green pepper (sliced)
  • 100g Mushrooms (sliced)
  • 50g Pickled jalapenos (diced)
  • 2 Green chilies (sliced)

Pasta Sauce

  • 2 tbsp Tomato puree
  • 1 tbsp Dried thyme
  • 1 tbsp Chili powder
  • 1/2 tbsp Cayenne pepper
  • 1/2 tbsp Onion granules
  • 1/2 tbsp Garlic granules
  • 1/4 tbsp Paprika

Instructions
 

  • Add the tagliatelle to a saucepan. Cover with boiling water from the kettle and bring to a boil. Lower the heat to medium and cook for 8-10 minutes until the pasta is cooked through.
  • Add the olive oil to a large pan and heat to medium-high. Add the pepperoni and onion and cook for 2-3 minutes stirring frequently. Add the green pepper, mushrooms, pickled jalapenos and green chilies and cook for a further 2-3 minutes.
  • Add the tomato puree, thyme, chili powder, cayenne pepper, onion granules, garlic granules and paprika. Cook for a further minute stirring constantly. Add a couple of splashes of the pasta water and drain the pasta.
  • Add the tagliatelle to the sauce and stir through until well combined. Serve immediately with Parmesan if you like and enjoy.
