Easy Pepperoni Tagliatelle with a Kick
Easy pepperoni tagliatelle pasta made with onions, peppers, mushrooms, chilies and pickled jalapenos.
Ingredients
- 200g Tagliatelle pasta
- 1 tbsp Olive oil
- 120g Hot pepperoni slices (diced)
- 1/2 Onion (sliced)
- 1/2 Green pepper (sliced)
- 100g Mushrooms (sliced)
- 50g Pickled jalapenos (diced)
- 2 Green chilies (sliced)
Pasta Sauce
- 2 tbsp Tomato puree
- 1 tbsp Dried thyme
- 1 tbsp Chili powder
- 1/2 tbsp Cayenne pepper
- 1/2 tbsp Onion granules
- 1/2 tbsp Garlic granules
- 1/4 tbsp Paprika
Instructions
- Add the tagliatelle to a saucepan. Cover with boiling water from the kettle and bring to a boil. Lower the heat to medium and cook for 8-10 minutes until the pasta is cooked through.
- Add the olive oil to a large pan and heat to medium-high. Add the pepperoni and onion and cook for 2-3 minutes stirring frequently. Add the green pepper, mushrooms, pickled jalapenos and green chilies and cook for a further 2-3 minutes.
- Add the tomato puree, thyme, chili powder, cayenne pepper, onion granules, garlic granules and paprika. Cook for a further minute stirring constantly. Add a couple of splashes of the pasta water and drain the pasta.
- Add the tagliatelle to the sauce and stir through until well combined. Serve immediately with Parmesan if you like and enjoy.
