How to Make Cajun Chicken with Sweetcorn Salsa at Home

Ingredients
  

Cajun Chicken

  • 2 Chicken breasts
  • 1 1/2 tbsp Cajun seasoning
  • 1 tbsp Olive oil

Creamy Sweetcorn Salsa

  • 1 tbsp Olive oil
  • 150g Sweetcorn
  • 1/2 Red pepper (diced)
  • 2 tbsp Pickled jalapenos (chopped)
  • 2 Spring onions (chopped)
  • 1 tbsp Coriander (herb)
  • 2 tbsp Mayonnaise

To Serve

  • 250g Rice
  • Coriander (optional)
  • Chilli flakes (optional)

Instructions
 

  • Start by cooking the rice according to the packet instructions. Once cooked, set it aside and keep warm.
  • Meanwhile, coat the chicken breasts evenly with the Cajun seasoning and olive oil. Heat a large frying pan to a medium heat. Add the chicken and cook for 5 to 6 minutes on each side, or until cooked through and golden on the outside. Once done, remove from the pan and allow it to rest for a few minutes.
  • Meanwhile, heat 1 tbsp olive oil in a pan over medium heat. Add the sweetcorn, red pepper, pickled jalapenos, spring onions and coriander. Season with salt and pepper to taste and cook for 5 minutes. Stirring frequently. Remove from the heat and add the mayonnaise and mix until well combined.
  • Plate the rice, Cajun chicken and sweetcorn salsa and finish with coriander and chilli flakes to your liking.
