How to Make Cajun Chicken with Sweetcorn Salsa at Home
Ingredients
Cajun Chicken
- 2 Chicken breasts
- 1 1/2 tbsp Cajun seasoning
- 1 tbsp Olive oil
Creamy Sweetcorn Salsa
- 1 tbsp Olive oil
- 150g Sweetcorn
- 1/2 Red pepper (diced)
- 2 tbsp Pickled jalapenos (chopped)
- 2 Spring onions (chopped)
- 1 tbsp Coriander (herb)
- 2 tbsp Mayonnaise
To Serve
- 250g Rice
- Coriander (optional)
- Chilli flakes (optional)
Instructions
- Start by cooking the rice according to the packet instructions. Once cooked, set it aside and keep warm.
- Meanwhile, coat the chicken breasts evenly with the Cajun seasoning and olive oil. Heat a large frying pan to a medium heat. Add the chicken and cook for 5 to 6 minutes on each side, or until cooked through and golden on the outside. Once done, remove from the pan and allow it to rest for a few minutes.
- Meanwhile, heat 1 tbsp olive oil in a pan over medium heat. Add the sweetcorn, red pepper, pickled jalapenos, spring onions and coriander. Season with salt and pepper to taste and cook for 5 minutes. Stirring frequently. Remove from the heat and add the mayonnaise and mix until well combined.
- Plate the rice, Cajun chicken and sweetcorn salsa and finish with coriander and chilli flakes to your liking.
