Ingredients

  • 2 Crusty bread slices
  • 1 tbsp Olive oil
  • 5 Cooked Brussels sprouts (sliced)
  • 2 Turkey slices
  • 1 Stuffing ball (quartered)
  • 1 Gouda cheese slice
  • Crispy onions
  • 2 tbsp Mayonnaise
  • 1 tsp Garlic puree
  • Gravy (to serve)

Instructions

  • Preheat the oven to gas mark 6/200℃/400℉. Heat the oil in a small frying pan to medium-high. Add the Brussels sprouts and cook for 3-5 minutes, stirring frequently, until warmed through and starting to char. Season with salt and pepper to taste.
  • Meanwhile, toast the bread to your liking. And add the mayonnaise and garlic puree to a small bowl and mix until well combined.
  • Spread the garlic mayonnaise across the top of the two pieces of bread (one will be for the bottom of the sandwich and one for the inside lid). Place one of the toasted bread slices on a baking tray and add the Brussels sprouts, then the turkey slices and stuffing. Add the sliced Gouda cheese and cook in the oven for 2-4 minutes until the cheese is melted.
  • Remove from the oven and top with crispy onions and add the sandwich top. Cut in half and serve with leftover gravy and enjoy.
