Mint Chocolate Mousse: The Ultimate After-Dinner Treat
Mint chocolate mousse with whipped cream, fresh mint and mint biscuit.
Ingredients
- 200g Dark chocolate
- 4 Eggs
- 375ml Double cream
- 1 tsp Peppermint extract
To Serve
- Whipped cream (optional)
- Mint chocolate biscuits (optional)
- Fresh mint (optional)
Instructions
- Break the chocolate into segments and place in a bowl over a pan of simmering water. Stir until melted (2-4 minutes) and set aside.
- Meanwhile, separate the egg whites and yolks and add the egg whites to a mixing bowl. Use an electric mixer and mix on a high speed for 1-2 minutes until the eggs create soft peaks. Set aside.
- In another mixing bowl add the cream and mix on high speed for 1-2 minutes until they form soft peaks as well. Add the egg yolks and mix on low until well combined (1 minute). Add the chocolate and peppermint extract and mix until combined (1 minute).
- Add the egg whites and mix until well combined (1 minute). Divide the mixture between 6 glasses and put in the fridge for an hour. Remove and top with whipped cream, crushed mint biscuits, and fresh mint (all optional). Serve and enjoy.
