Nutella and Banana Pancakes
Ingredients
- 200g Self-raising flour
- 1 1/2 tsp Baking powder
- 1 tbsp Caster sugar
- 3 Eggs
- 25g Butter (melted)
- 200ml Milk
- 2 tbsp Oil
- 2 tbsp Butter
- 200g Nutella
- 2 Bananas (sliced)
- Icing sugar (optional)
Instructions
- Mix the flour, baking powder, caster sugar and a pinch of salt together in a mixing bowl. Make a well in the centre and add the eggs, melted butter and milk. Whisk until a smooth batter is formed and pour into a jug.
- Heat the half the oil and butter in a large frying pan to medium heat. Pour a little of the batter mixture into the centre of the pan until it forms a small round pancake shape to your liking (around 8cm wide).
- Cook until bubbles appear on the surface of the pancake (around 1-2 minutes) and flip to cook for the same amount of time on the other side (until golden brown). Continue this process with the rest of the pancake batter and add the rest of the oil and butter when half the mixture has been used (to avoid the rest of the pancakes sticking).
- Warm the nutella in a microwave for 30 seconds and stir to loosen the spread up. Spread the nutella across the top of each of the pancakes and stack on top of each other. Add bananas to the top of the stack and dust with icing sugar if you like, and enjoy.
