Retro School Cake Recipe: Simple & Delicious

Beloved school cake recipe from your childhood with icing and sprinkles.

Ingredients
  

Cake

  • 280g Margarine
  • 280g Caster sugar
  • 5 Medium eggs
  • 1 tsp Vanilla extract
  • 280g Self raising flour

Icing

  • 350g Icing sugar
  • 3-5 tbsp Boiling water
  • Sprinkles (to your liking)

Instructions
 

  • Preheat oven to gas mark 4/180℃/350℉. Line a 9 x 12-inch baking tin with grease-proof paper.
  • In a large mixing bowl, add the margarine and caster sugar. Use an electric mixer to cream together, until light and fluffy.
  • Add the eggs one at a time and mix through individually until fully incorporated into the mixture. Add the vanilla extract and mix until well combined.
  • Sift the flour into the bowl and gently fold into the mixture using a wooden spoon or spatula to form a smooth batter. Transfer to the baking tin and bake in the centre of the oven for 30-40 minutes until golden and a skewer comes out clean. Leave to cool on a wire rack.
  • In another mixing bowl at the icing and 1 tbsp of boiling water at a time. Mix until combined and it creates a thick pouring texture. Pour the icing onto the cooled cake and use a spoon or knife to cover the cake evenly with the icing. Add the sprinkles to the icing, cut into 12 pieces and enjoy.
