Spiced Cauliflower and Lentil Soup
Ingredients
- 1 tbsp Coconut oil
- 1/2 Onion (roughly chopped)
- 2 Garlic cloves (roughly chopped)
- Ginger (thumb-sized, grated)
- 1 Chilli (roughly chopped)
- 1 tsp Curry powder, mild
- 1/2 tsp Cumin
- 1/2 tsp Chilli powder, mild
- 1/2 tsp Ground coriander
- 285g Cauliflower (cut into small florets)
- 50g Red split lentils
- 585ml Vegetable stock
- 200ml Coconut milk
To Serve
- 1 tsp Chilli flakes (optional)
Instructions
- Heat the coconut oil in a large pan to medium-high. Add the onion and fry for 2 minutes, stirring continuously. Add the garlic, ginger and chilli and cook for a further minute.
- Add the curry powder, cumin, chilli powder and coriander and cook for 1 minute, stirring frequently. Add the cauliflower and lentils and fry for a further minute.
- Add the vegetable stock and coconut milk, and bring to the boil. Season to taste. Reduce heat to medium and allow to simmer for 15 minutes, stirring occasionally.
- Pour the mixture into a blender and blend until smooth. Check seasoning and add more salt and pepper if needed. Serve immediately in a bowl. Sprinkle chilli flakes on top (optional), and enjoy.
