cauliflower and lentil soup

Spiced Cauliflower and Lentil Soup

Healthy cauliflower and lentil soup made with onion, garlic, ginger, chillies, cauliflower, red split lentils, spices and coconut milk

Ingredients
  

  • 1 tbsp Coconut oil
  • 1/2 Onion (roughly chopped)
  • 2 Garlic cloves (roughly chopped)
  • Ginger (thumb-sized, grated)
  • 1 Chilli (roughly chopped)
  • 1 tsp Curry powder, mild
  • 1/2 tsp Cumin
  • 1/2 tsp Chilli powder, mild
  • 1/2 tsp Ground coriander
  • 285g Cauliflower (cut into small florets)
  • 50g Red split lentils
  • 585ml Vegetable stock
  • 200ml Coconut milk

To Serve

  • 1 tsp Chilli flakes (optional)

Instructions
 

  • Heat the coconut oil in a large pan to medium-high. Add the onion and fry for 2 minutes, stirring continuously. Add the garlic, ginger and chilli and cook for a further minute.
  • Add the curry powder, cumin, chilli powder and coriander and cook for 1 minute, stirring frequently. Add the cauliflower and lentils and fry for a further minute.
  • Add the vegetable stock and coconut milk, and bring to the boil. Season to taste. Reduce heat to medium and allow to simmer for 15 minutes, stirring occasionally.
  • Pour the mixture into a blender and blend until smooth. Check seasoning and add more salt and pepper if needed. Serve immediately in a bowl. Sprinkle chilli flakes on top (optional), and enjoy.
