Thai Chicken Basil Stir-Fry: A Simple and Spicy Delight
Thai chicken basil stir-fry made with chicken mince, green beans, peppers, onions, chilies and fresh basil.
Ingredients
- 500g Chicken mince
- 1 tbsp Olive oil
- 1/2 Onion (thinly sliced)
- 150g Green beans (cut in half)
- 1 Red pepper (thinly sliced)
- 4 Garlic cloves (crushed)
- 2 tbsp Light soy
- 1 tbsp Dark soy
- 1 tbsp Honey
- 1/2 tbsp Fish sauce
- 100ml Chicken stock
To Serve
- Fresh basil (handful)
- Fresh chilies (optional)
- Sticky rice
Instructions
- Add the olive oil to a wok or large frying pan and heat to medium-high. Add the chicken mince and cook for 2-3 minutes until starting to brown, stirring frequently. Add the onion and cook for a further 2 minutes.
- Add the green beans and the red pepper and cook for 2 minutes. Add the garlic, light soy, dark soy, honey, fish sauce, and chicken stock to the pan. Cook for 2-3 minutes stirring frequently until the stock has reduced and the chicken is cooked through. Remove from the heat and add the fresh basil and chilies. Serve with sticky rice and enjoy.
