The Best Homemade Beef Quesadillas
Ingredients
Beef Filling
- 1 tbsp Olive oil
- 1/2 Onion (diced)
- 1/2 Red pepper (diced)
- 200g Ground beef
- 50g Pickled jalapenos (diced)
- 1 tbsp Cumin
- 1 tbsp Paprika
- 1/2 tbsp Chilli powder
- 1/4 tbsp Garlic granules
- 1 tbsp Tomato puree
- Lime Juice (couple of dashes)
- 250ml Water
Quesadilla Ingredients
- Fry light spray
- 4 Taco wraps
- 250g Grated cheese
Instructions
- Add the olive oil to a large pan and heat to medium-high. Next, add the onion and red pepper and cook for 2 minutes until they begin to soften, stirring frequently. Then, add the ground beef and cook for 3-5 minutes, breaking up the mince with a wooden spoon and stirring constantly.
- When the mince is browned, add the pickled jalapenos, cumin, paprika, chilli powder and garlic granules. Cook for a minute, stirring constantly. Then, add the tomato puree and lime juice. Season with salt and pepper to taste and cook for a further minute. Then add the water and cook on medium for 10 minutes, until the water evaporates and the beef filling is cooked through. Remove from heat and set aside.
- Place a taco wrap on a plate or worktop and add 1/4 of the grated cheese. Top with 1/2 of the beef filling, then another 1/4 of the grated cheese and top with another taco wrap. Do the same for the next quesadilla.
- Heat a couple of sprays of fry light to a medium heat in a large frying pan and add the quesadilla. Cook for 1-2 minutes, then cover with a plate and flip the frying pan upside down to remove the quesadilla. Then slide the uncooked side back into the pan and cook for 1-2 minutes. Remove from the heat and cut into quarters. Repeat for the second quesadilla. Serve and enjoy.
