The Ultimate Black Lentil Curry: Easy and Delicious

Black lentil curry with cream and fresh coriander. Served with rice and naan.

Ingredients
  

  • 1 tbsp Olive oil
  • 1 Onion (thinly sliced)
  • 1 Thumb-sized piece of ginger (grated)
  • 2 Garlic cloves (crushed)
  • 1/2 tbsp Turmeric
  • 1/2 tbsp Chilli powder
  • 1/2 tbsp Cumin
  • 1/2 tbsp Ground coriander
  • 1/2 tbsp Garam masala
  • 1/2 cup Tomato puree
  • 100ml Double cream
  • 400g Canned black lentils

To Serve

  • 2 tbsp Double cream
  • Fresh coriander

Instructions
 

  • Heat the oil in a large saucepan on medium-high. Add the onion and cook for 5 minutes, stirring constantly, until browned.
  • Add the ginger, garlic, turmeric, chilli powder, cumin, ground coriander and garam masala. Cook for a minute stirring constantly. Then add the tomato puree and cook for a further minute.
  • Add the black lentils with its liquid to the pan and season with salt and pepper to taste. Cook for 10 minutes on a medium heat stirring frequently. Add the double cream and lower the temperature to low, Cook for 5 minutes until warmed through. Remove from the heat and serve with rice or naan bread. Drizzle with the extra double cream and sprinkle with fresh coriander and enjoy.
