The Ultimate Chicken Tikka Sandwich Recipe

Ingredients
  

Chicken Tikka

  • 1/2 tbsp Garlic granules
  • 1/2 tbsp Ginger powder
  • 1/2 tbsp Garam masala
  • 1/2 tbsp Ground coriander
  • 1/2 tbsp Ground cumin
  • 1/2 tbsp Turmeric
  • 2 tbsp Tomato puree
  • 1/2 cup Natural yoghurt
  • 1 Chicken breast (cut into small chunks)
  • 1 tbsp Olive oil

Ingredients

  • 2 Bread buns
  • 4 tbsp Plain yoghurt
  • 1 tbsp Mint sauce
  • 50g Lettuce (shredded)
  • 1/2 Red onion (sliced)
  • 2 Onion bhajis (leftovers- cut in half)
  • Fresh coriander (to serve)

Instructions
 

  • In a small bowl mix together the garlic, ginger, garam masala, ground coriander, ground cumin, turmeric and tomato puree. Add a pinch of salt and add in the yoghurt and chicken, mix until well combined.
  • Heat the oil in a large pan to medium-high. Add the chicken and cook for 6-8 minutes, stirring frequently, until cooked through and the juices run clear. Set aside.
  • Meanwhile, cut the bread buns in half and lightly toast. Mix the plain yoghurt and mint sauce in a small bowl and then spread across the top and bottom of the bun lids. Add the shredded lettuce and red onion.
  • Top with the chicken tikka and onion bhajis (you can warm these through if you like). Then add fresh coriander and enjoy.
