The Ultimate Spicy Chicken Pasta for Dinner Tonight
Spicy chicken pasta with cajun chicken breast and a spicy tomato sauce. With broccoli, green beans, mushrooms, red onion, red peppers and pickled jalapenos.
Ingredients
- 1 tbsp Olive oil
- 2 Chicken breasts
- 4 tbsp Cajun seasoning
- 200g Penne pasta
Pasta Sauce
- 1 tbsp Olive oil
- 50g Pickled jalapenos
- 50g Mushrooms (sliced)
- 1/2 Red onion (diced)
- 1 Red pepper (diced)
- 1 tbsp Chilli powder
- 1 tbsp Cayenne
- 1 tbsp Paprika
- 1/2 tbsp Garlic granules
- 1/2 tbsp Onion granules
- 2 tbsp Tomato puree
- 400g Chopped tomatoes
- 400g Chicken stock
Pasta Ingredients
- 1/2 Head broccoli (broken into small florets
- 100g Green beans
Instructions
- Add 1 tbsp olive oil to a large frying pan and heat to medium-high. Place the chicken breasts on a plate and sprinkle with the Cajun seasoning and salt and pepper to taste. Rub the seasoning into the chicken until well coated. Cook for around 6 minutes on each side (12 minutes in total) until the chicken is cooked through and the juices run clear. Remove from the heat, slice and set aside.
- Meanwhile, cook the penne pasta according to the packet instructions. (Around 9-12 minutes). Drain when cooked but keep a splash of pasta water aside.
- Meanwhile, add the olive oil to a large saucepan and heat to medium-high. Add the pickled jalapenos, mushrooms, red onion, and red pepper. Cook for 3-4 minutes stirring constantly. Add the chilli powder, cayenne, paprika, garlic granules, and onion granules. Cook for a further minute stirring constantly.
- Then, add the tomato puree, chopped tomatoes and chicken stock. Bring to a boil and add the broccoli and green beans. Reduce the heat to medium and cook for 15 minutes until the sauce has thickened and the vegetables are cooked. Add the pasta back to the pan and warm through. Season with salt and pepper to taste.
- Divide between two serving bowls and top with the cajun chicken. Add some grated cheese if you like and enjoy.
