The Ultimate Sweet Potato Soup: Simple and Delicious
Ingredients
- 1 tbsp Olive oil
- 1 Onion (chopped)
- 1 Garlic clove (chopped)
- Ginger (thumb-sized- grated)
- 1 tsp Paprika
- 1 tsp Cayenne pepper
- 1 tsp Chili flakes
- 1 tsp Ground coriander
- 785g Sweet potato (peeled, and cut into cubes)
- 200ml Vegetable stock
- 400ml Coconut milk
Instructions
- Heat the oil to medium-high in a large saucepan. Add the onion and cook stirring frequently for 4-5 minutes. Add the garlic, ginger, paprika, cayenne pepper, chili flakes, and ground coriander. Cook for 1 minute stirring constantly.
- Add the sweet potato, vegetable stock and coconut milk and cook for 15 mins until the sweet potato is softened. Add to a blender and blend until smooth (you will have to do this in batches). Return to a saucepan and warm through for a couple of minutes. Season with salt and pepper to taste and enjoy.
