Ultimate BBQ Pulled Pork Nachos with a Crunch

BBQ pulled pork nachos topped with cheese, salsa, sour cream and jalapenos. Finished with chillies, spring onions, crispy onions and coriander.

Ingredients
  

  • Pulled pork (see below)
  • Barbecue sauce (see below)
  • 150g Tortilla chips
  • 50g Cheddar cheese (grated)
  • 50g Red Leicester cheese (grated)
  • 50g Pickled jalapenos
  • 4 tbsp Salsa
  • 4 tbsp Sour cream
  • 1 Red chilli (sliced)
  • 2 Spring onions (sliced)
  • Crispy onions (see below)
  • Coriander (handful)

Instructions
 

  • Heat grill to medium. Use leftover pulled pork and bottled barbecue sauce to your liking or follow my recipe to make your own from scratch. Add the pulled pork and barbecue sauce to a small saucepan and warm on low for 5 minutes, stirring frequently.
  • Place the tortilla chips in a large dish and spread evenly. Top with the grated cheeses and barbecue pulled pork. Place under the grill and cook for 3-5 minutes until the cheese has melted.
  • Top with jalapenos, salsa, sour cream, red chilli, spring onions, crispy onions (you can use shop-bought or follow my recipe here to make your own), and fresh coriander. Serve immediately and enjoy.
