In fact, these loaded fries are the ultimate comfort food, combining crispy fries with tender pulled pork, gooey melted cheese, spicy chilies, fresh spring onions, crispy onions, and a drizzle of tangy American mustard.

Ultimate Leftover Pulled Pork Loaded Fries

Pulled pork loaded fries using leftover pulled pork. Topped with cheese, chillies, spring onion, crispy onions and American mustard.

Ingredients
  

  • 500ml Sunflower oil
  • 500g Maris piper potatoes (cut into fries)
  • 250g Pulled pork (see below)
  • 2 tbsp Barbecue sauce
  • 150g Grated cheese (I used red leicester)

Garnish

  • 4 Spring onions (chopped)
  • 2 tbsp Crispy onions (see below)
  • 1 Red chilli (sliced)
  • 1/2 Onion (diced)
  • American mustard (drizzled on top- optional)

Instructions
 

  • Preheat oven to gas mark 5/190℃/375℉. Heat the oil to medium in a large pan. Add the fries and cook for 10-15 minutes until golden brown. Remove from the oil and place on paper towels to remove excess oil, season with salt to taste.
  • Meanwhile, warm through the pulled pork and barbecue sauce, in a small pan, on a low heat, stirring frequently. (You can use leftover pulled pork and bottled barbecue sauce or follow my recipe Slow Cooker Barbecue Pulled Pork Sandwich if you want to make them both from scratch).
  • Transfer the fries to an oven-proof dish and top with the barbecue pulled pork and grated cheese. Cook for 1-2 minutes until the cheese has melted. Top with the spring onions, crispy onions (either shop-bought or follow the instructions for crispy onions on my Pepperoni and Ham Sandwich recipe), red chilli, and onions. Drizzle with American mustard if you like, and enjoy.
