These loaded sweet potato fries with pulled chicken are the comfort food. They are easy to make and are packed full of flavour. They make a delicious change to regular loaded fries and will soon be your new favourite go-to recipe!

I used chicken thighs for this recipe, however, you can use chicken breast if you prefer. Additionally, if you’re not a huge fan of spice you can remove the fresh red chilies from the recipe.

Ultimate Loaded Sweet Potato Fries with Pulled Chicken

Loaded sweet potato fries with pulled chicken and cheese. Topped with spring onions, red chili, parsley, chili flakes and a spicy dressing.

Ingredients
  

  • 500g Sweet potatoes (cut into fries)
  • 1 tbsp Olive oil
  • 4 Chicken thighs (boneless and skinless)
  • 1 tbsp Lime juice
  • 1 tbsp Cumin
  • 1 tbsp Chili powder
  • 1 tbsp Garlic granules
  • 1 tbsp Paprika

Spicy Dressing

  • 2 tbsp Mayonnaise
  • 1 tbsp Hot sauce

Garnish

  • 150g Grated cheese (I used red Leicester)
  • 4 Spring onions (chopped)
  • 2 Red chilies (sliced)
  • Parsley (handful, chopped)
  • Chili flakes (optional)

Instructions
 

  • Heat the air fryer to 200℃ and heat the grill to medium. Add the sweet potato fries to a large bowl and drizzle with olive oil. Toss until well coated and season with salt to taste. Cook in the air fryer for 15 minutes, tossing them frequently, until golden brown and crispy.
  • Meanwhile, place the chicken thighs in a small saucepan and add cold water until just covered. Bring to a boil and then reduce heat to medium and cook for 15 minutes until cooked through. Drain the water and then shred the chicken with two forks.
  • Add the lime juice, cumin, chili powder, garlic granules, and paprika to the chicken. Season with salt and pepper to taste and cook on low for 2-3 minutes, stirring frequently.
  • Divide the sweet potato fries between two bowls and top with the grated cheese and chicken. Cook under the grill for 2-3 minutes until the cheese has melted. Meanwhile, add the mayonnaise and hot sauce to a small bowl and mix until well combined.
  • Remove the fries from under the grill and top with the spring onions, red chili, spicy dressing, parsley and chili flakes (optional) and enjoy.
