This vegan-friendly carrot and red lentil soup is super easy to make and is ready in only 30 minutes! It makes the perfect healthy lunch or dinner and is packed full of flavour and vegetables.

Carrot and Red Lentil Soup
Carrot and red lentil soup made with onion, carrot, red lentils, spices and stock.
Ingredients
- 1 tbsp Coconut oil
- 1 Onion (finely sliced)
- 1 tsp Ground coriander
- 1 tsp Turmeric
- 155g Carrots (cut into small dices)
- 3 Garlic cloves (crushed)
- 1 Litre Vegetable stock
- 85g Red lentils
- 1 tbsp Parsley
Instructions
- Heat coconut oil in a large pan to medium-high. Fry the onions for 2 minutes, stirring continuously. Add the ground coriander and turmeric and cook for a further minute, stirring continuously.
- Add the carrots and garlic and fry for 2 minutes, stirring frequently. Add the vegetable stock and red lentils and bring to a boil. Reduce heat, cover the pan and simmer for 15 minutes, stirring occasionally. Add the parsley just before serving and stir through. Serve in bowls and enjoy.
