Chicken Ramen

Quick and easy chicken ramen with beansprouts, red onion, chillies, spring onion and coriander.

Ingredients
  

  • 4 Boneless chicken thighs
  • 1 tbsp Oil
  • 125g Egg noodles
  • Beansprouts (2 handfuls)
  • 800ml Chicken stock
  • 3 tbsp Sriracha
  • 3 tbsp Light soy

Garnish

  • 4 Spring onions (chopped)
  • 2 Red chillies (sliced)
  • 1 Small red onion (sliced)
  • Fresh coriander

Instructions
 

  • Heat 1 tbsp oil in a large frying pan to medium. Season the chicken thighs with salt and pepper to taste and cook for 10-15 minutes (turning half way through) until the chicken is cooked through and the juices run clear.
  • Meanwhile, add the noodles, beansprouts, chicken stock, sriracha and soy sauce to a saucepan. Season with salt and pepper to taste and cook on medium-high for 4-5 minutes, until the noodles are softened. Remove from the heat and divide between two bowls.
  • Slice the chicken thighs and add to the top of the noodles. Add the spring onions, red chillies, red onion and coriander for garnish and serve immediately.
