Chicken Ramen
Ingredients
- 4 Boneless chicken thighs
- 1 tbsp Oil
- 125g Egg noodles
- Beansprouts (2 handfuls)
- 800ml Chicken stock
- 3 tbsp Sriracha
- 3 tbsp Light soy
Garnish
- 4 Spring onions (chopped)
- 2 Red chillies (sliced)
- 1 Small red onion (sliced)
- Fresh coriander
Instructions
- Heat 1 tbsp oil in a large frying pan to medium. Season the chicken thighs with salt and pepper to taste and cook for 10-15 minutes (turning half way through) until the chicken is cooked through and the juices run clear.
- Meanwhile, add the noodles, beansprouts, chicken stock, sriracha and soy sauce to a saucepan. Season with salt and pepper to taste and cook on medium-high for 4-5 minutes, until the noodles are softened. Remove from the heat and divide between two bowls.
- Slice the chicken thighs and add to the top of the noodles. Add the spring onions, red chillies, red onion and coriander for garnish and serve immediately.
