Chicken Ramen

Quick and easy chicken ramen with beansprouts, red onion, chillies, spring onion and coriander.

Ingredients

4 Boneless chicken thighs
1 tbsp Oil
125g Egg noodles
Beansprouts (2 handfuls)
800ml Chicken stock
3 tbsp Sriracha
3 tbsp Light soy

Garnish

4 Spring onions (chopped)
2 Red chillies (sliced)
1 Small red onion (sliced)
Fresh coriander

Instructions

Heat 1 tbsp oil in a large frying pan to medium. Season the chicken thighs with salt and pepper to taste and cook for 10-15 minutes (turning half way through) until the chicken is cooked through and the juices run clear.
Meanwhile, add the noodles, beansprouts, chicken stock, sriracha and soy sauce to a saucepan. Season with salt and pepper to taste and cook on medium-high for 4-5 minutes, until the noodles are softened. Remove from the heat and divide between two bowls.
Slice the chicken thighs and add to the top of the noodles. Add the spring onions, red chillies, red onion and coriander for garnish and serve immediately.
