These Chinese chicken skewers are easy to make and are packed full of flavour. The recipe makes 4 skewers in total and they make the perfect lunch or dinner. You can also grill or barbecue the skewers if you like and serve with rice or salad.

Chinese Chicken Skewers
Chicken skewers in a Chinese style marinade with peppers and red onion
Ingredients
Chinese Marinade
- 2 tbsp Lemon juice
- 2 tbsp Light soy
- 2 tbsp Honey
- 2 tbsp Mirin
- 1 1/2 tbsp Hoisin sauce
- 1 1/2 tbsp Oyster sauce
- 1 tbsp Sriracha
- 1/4 cup Tomato ketchup
- 1/2 tsp Sesame oil
- 1/2 tsp Garlic granules
- 1/2 tsp Ground ginger
- 1/2 tsp Chinese 5 spice
Ingredients
- 2 Chicken breasts (cut into chunks)
- 1 Red pepper (cut into chunks)
- 1 Green pepper (cut into chunks)
- 1 Yellow pepper (cut into chunks)
- 1 Red onion (cut into chunks)
To Serve
- Long grain rice
Instructions
- Heat oven to gas mark 5/190℃/375℉ and line a baking tray with grease proof paper. Add the lemon juice, light soy, honey, mirin, hoisin sauce, oyster sauce, sriracha, ketchup, sesame oil, garlic granules, ground ginger and Chinese 5 spice to a mixing bowl. Add the chicken and toss until well combined.
- Using 4 skewers add the chicken, onion and peppers alternating between each until the skewers are almost full (leave space on each end to hold and be able to turn the skewers.
- Place on the baking tray and cook for 30 minutes until cooked through, turning and adding more marinade after every 10 minutes of cooking (if you like your skewers with a little char then remove from the oven after 25 minutes and cook for 5 minutes in a large frying pan at medium temperature, turning frequently). Serve alongside rice or salad.
