Pepperoni and Ham Sandwich

Pepperoni and ham sandwich in a panini with mustard mayo, spinach, mozzarella and crispy Onions.

Ingredients
  

Crispy Onions (optional)

  • 200ml Sunflower oil
  • 1/2 Small red onion (finely chopped)
  • 1 tbsp Plain flour
  • 1/2 tbsp Paprika
  • 1/2 tsp Garlic powder

Panini Ingredients

  • 2 Paninis, cut length ways in half (toast if you like)
  • 2 tbsp Mayonnaise
  • 1 tbsp American mustard
  • 20g Spinach
  • 4 Ham slices
  • 1 tbsp Coconut oil
  • 1/2 Onion (finely chopped)
  • 50g Sliced pepperoni (cut into small chunks)
  • 1/2 tsp Cayenne pepper
  • 1/2 tsp Paprika
  • 1/4 tsp Garlic granules
  • 40g Mozzarella (grated)

To Serve (optional)

  • 1/4 tsp Chilli flakes
  • 1/4 tsp Fresh parsley

Instructions
 

  • Place flour, paprika and garlic powder in a bowl. Add the red onion and salt and pepper to taste. Toss until well coated. Heat 200ml sunflower oil to medium-high in a small pan and cook the onions for 1-2 minutes until crispy and golden. Set aside on kitchen paper to remove excess oil.
  • Mix the mayonnaise and mustard together in a small bowl and spread on the bottom halves of the paninis. Top with the spinach and ham. Heat grill to medium.
  • Heat 1 tbsp coconut oil in a frying pan to medium-high. Add the onion, pepperoni, cayenne pepper, paprika and garlic granules. Fry for 2-3 minutes until the onion begins to soften. Remove from the heat and place on kitchen paper to remove any excess moisture.
  • Place the pepperoni mixture on top of the ham. Sprinkle with the grated mozzarella and place under the grill for 1-3 minutes until melted. Top with chilli flakes, fresh parsley and crispy onions. Place the tops of the paninis onto the toppings, cut in half and serve.
