This quick, easy and healthy carrot soup is ready in 30 minutes and is packed full of vegetable goodness. Moreover, this vegan-friendly recipe is simple to make but delicious. Before you know it, it will become one of your lunchtime favourites.
To make it even better, serve with fresh coriander, chili flakes, croutons, bread or both for a lunch that will keep you full for hours!

Healthy Carrot Soup
Healthy carrot soup packed full of carrots, pepper, potato, coriander and garlic.
Ingredients
- 1 tbsp Olive oil
- 1 Onion (roughly chopped)
- 2 Garlic cloves
- 1 tbsp Ground coriander
- 450g Carrots (cut into small chunks)
- 1 Potato (cut into small chunks)
- 1 Red pepper (cut into large chunks)
- 600ml Vegetable stock
To Serve
- Handful Fresh coriander
- Chili flakes (to your liking)
- Croutons (to your liking)
- Bread roll (optional)
Instructions
- Heat the oil in a large pan to medium-high and fry the onion for around 3 minutes, until beginning to soften.
- Add the garlic, ground coriander, carrots, potato and red pepper and cook for 1 minute.
- Add the vegetable stock and bring to a boil. Reduce heat to low, cover and simmer for 20 minutes.
- Put the mixture into a blender (in batches if needed) and blend until smooth. Return to pan and warm through for a minute. Season to taste.
- Serve with fresh coriander, croutons, or bread, and add a sprinkle of chili flakes if you like a little kick.
