Quick and Easy Cauliflower Korma for Weeknight Dinners
Ingredients
- 1 tbsp Olive oil
- 100g Korma paste
- 1 Garlic clove (crushed)
- 1 Thumb-sized piece of ginger (grated)
- 1 tbsp Ground coriander
- 250ml Vegetable stock
- 1/2 Head of cauliflower (broken into small florets)
- 100g Green beans
- 100g Vegan plain yoghurt
Instructions
- Add the olive oil to a large saucepan and heat to medium-high. Add the korma paste, garlic, ginger and coriander and cool for a minute stirring frequently. Then, add the vegetable stock and cauliflower. Cook for 10 minutes, stirring frequently.
- Add the green beans and cook for a further 5 minutes. Season with salt and pepper to taste. Remove from the heat and add the yoghurt to the curry, stirring until well combined. Serve with or naan bread and enjoy.
