Make it Vegan

Roasted Pepper and Garlic Dip
Ingredients
- 2 Peppers (red or orange- cut into chunks)
- 1/2 Garlic bulb (skin still on)
- 2 tbsp Olive oil
- 50g Greek yoghurt
- 1 tbsp Lemon juice
- 1 tsp Paprika
- 1/2 tsp Cayenne pepper
Garnish
- 1/2 tsp Chilli flakes (optional)
Instructions
- Preheat oven to gas mark 6/200℃/400℉ and line a baking tray with grease proof paper. Add the peppers and garlic and drizzle with 1 tbsp olive oil. Season with salt and pepper to taste and cook for 25 minutes.
- Allow to cool and squeeze the garlic from it's skin into a blender and add the roasted peppers. Add 1 tbsp olive oil, the Greek yoghurt, lemon juice, paprika and cayenne pepper to the blender and season with salt and pepper to taste.
- Blend until smooth and serve in a small bowl. Sprinkle with chilli flakes if you like a kick and enjoy.
