pepper and garlic dip

Roasted Pepper and Garlic Dip

Roasted pepper and garlic dip made with peppers, garlic, Greek yoghurt, lemon juice, paprika, cayenne pepper and olive oil

Ingredients
  

  • 2 Peppers (red or orange- cut into chunks)
  • 1/2 Garlic bulb (skin still on)
  • 2 tbsp Olive oil
  • 50g Greek yoghurt
  • 1 tbsp Lemon juice
  • 1 tsp Paprika
  • 1/2 tsp Cayenne pepper

Garnish

  • 1/2 tsp Chilli flakes (optional)

Instructions
 

  • Preheat oven to gas mark 6/200℃/400℉ and line a baking tray with grease proof paper. Add the peppers and garlic and drizzle with 1 tbsp olive oil. Season with salt and pepper to taste and cook for 25 minutes.
  • Allow to cool and squeeze the garlic from it's skin into a blender and add the roasted peppers. Add 1 tbsp olive oil, the Greek yoghurt, lemon juice, paprika and cayenne pepper to the blender and season with salt and pepper to taste.
  • Blend until smooth and serve in a small bowl. Sprinkle with chilli flakes if you like a kick and enjoy.
