It’s vegan friendly and dairy-free and won’t disappoint.

You can serve it with either croutons, crusty bread or both for a healthy quick lunch or starter.

It’s also freezable so you can double up the recipe and reheat for an even quicker lunch option on the go!

Tomato Soup

The quickest and easiest tomato soup recipe ever!
Prep Time 2 minutes
Cook Time 15 minutes
Course Appetizer, Lunch, Soup
Servings 1 person

Ingredients
  

  • 400g Tinned chopped tomatoes
  • 2 tbsp Tomato puree
  • 2 Cloves garlic
  • 600ml Vegetable stock
  • 1 tbsp Oregano (dried)

To Serve

  • Crusty bread
  • Croutons
  • Fresh basil

Instructions
 

  • Put the chopped tomatoes, tomato puree and garlic into a blender and blitz until smooth.
  • Pour into a large pan and add the vegetable stock, oregano and season to taste. Bring to a boil and then simmer for around 15 minutes until desired consistency.
  • Pour into a bowl and serve with crusty bread, croutons and fresh basil.
