Tuna Pasta Salad
Ingredients
- 150g Penne pasta
- 145g Tuna
- 50g Sweetcorn
- 2 Spring onions (chopped)
- 1 Small red pepper (diced)
- 1 Carrot (grated and finely chopped)
- 1 Red chilli (finely chopped)
- 1/2 Red onion (diced)
- 3 tbsp Mayonnaise
- 1 tbsp Apple cider vinegar
- 1 tbsp Lime juice
- 1 tbsp Mexican hot sauce
- 1 tsp Fresh coriander
- 1 tsp Parsley
- 1 tsp Chilli flakes
- 1/2 tsp Garlic granules
Instructions
- Cook pasta according to packet instructions (around 8-10 minutes). Rinse with cold water, drain and set aside to cool.
- Add the tuna, sweetcorn, spring onions, red pepper, carrot, red chilli, onion, mayonnaise, apple cider vinegar, lime juice, Mexican hot sauce, coriander, parsley, chilli flakes and garlic granules to a large bowl. Season with salt and pepper to taste and stir until all the ingredients are well combined.
- Add the cold pasta to the bowl and toss until well combined. Serve in a bowl and enjoy.
