Tuna Pasta Salad

Tuna pasta salad made with tuna, pasta, red onion, red chilli, carrot, sweetcorn, red pepper, spring onions, herbs, spices and spicy mayonnaise

Ingredients
  

  • 150g Penne pasta
  • 145g Tuna
  • 50g Sweetcorn
  • 2 Spring onions (chopped)
  • 1 Small red pepper (diced)
  • 1 Carrot (grated and finely chopped)
  • 1 Red chilli (finely chopped)
  • 1/2 Red onion (diced)
  • 3 tbsp Mayonnaise
  • 1 tbsp Apple cider vinegar
  • 1 tbsp Lime juice
  • 1 tbsp Mexican hot sauce
  • 1 tsp Fresh coriander
  • 1 tsp Parsley
  • 1 tsp Chilli flakes
  • 1/2 tsp Garlic granules

Instructions
 

  • Cook pasta according to packet instructions (around 8-10 minutes). Rinse with cold water, drain and set aside to cool.
  • Add the tuna, sweetcorn, spring onions, red pepper, carrot, red chilli, onion, mayonnaise, apple cider vinegar, lime juice, Mexican hot sauce, coriander, parsley, chilli flakes and garlic granules to a large bowl. Season with salt and pepper to taste and stir until all the ingredients are well combined.
  • Add the cold pasta to the bowl and toss until well combined. Serve in a bowl and enjoy.
