Tuna Salad with Sriracha Mayo
Tuna Salad with Peppers, Red onion, Sweetcorn, Red chilli, Spring Onions, Lettuce and a Sriracha Mayo Dressing
Ingredients
- 50g Sweetcorn
- 2 Spring onions (finely sliced)
- 1 Red chilli (finely chopped)
- 1 Can of tuna (drained)
- 1/4 Lettuce (shredded)
- 1/2 Small red onion (finely diced)
- 1/4 Red pepper (cut into small dices)
- 1/4 Yellow pepper (cut into small dices)
- 1/4 tsp Garlic granules
- Chilli oil (drizzle)
Dressing
- 1 tbsp Mayonnaise
- 1 tbsp Sriracha
To Serve (Optional)
- 1/2 tsp Chilli flakes
- 1/2 tsp Sesame seeds
- 1/2 tsp Parsley
Instructions
- Add the sweetcorn, spring onions, red chilli, tuna, lettuce, red onion, and peppers to a large bowl. Sprinkle with garlic granules and salt and pepper to taste. Drizzle with chilli oil to your liking and toss until well combined. Add to your serving bowl.
- Mix the mayonnaise and sriracha in a small bowl and drizzle over the salad. Top with chilli flakes, sesame seeds and parsley.
