Authentic Chinese Chicken with Black Pepper Sauce

  • 1 tbsp Coconut oil
  • 2 Chicken breasts (cut into chunks)
  • 1 Carrot (peeled and cut into small rounds)
  • 1 Onion (cut into chunks)
  • 1 Yellow pepper (cut into chunks)
  • 1 Green pepper (cut into chunks)
  • 150g Mushrooms (halved)

Black Pepper sauce

  • 6 tbsp Oyster sauce
  • 6 tbsp Water
  • 2 tbsp Light soy
  • 2 tsp Cornflour
  • 2 tsp Black pepper
  • 1 tsp Garlic granules
  • 1/2 tsp Brown sugar
  • 1/4 tsp Salt

To Serve

  • Long grain rice

Instructions
 

  • Add the oyster sauce, water, light soy, cornflour, black pepper, garlic granules, brown sugar and salt to a bowl and whisk until well combined.
  • Heat 1 tbsp coconut oil in a wok or large frying pan to medium. Add the chicken and cook for 3-4 minutes turning frequently, until starting to brown. Add the carrots and cook for 1 minute.
  • Add the onion and peppers and cook for 2 minutes, stirring frequently. Add the mushrooms and fry for another 2 minutes. Add the sauce and stir until well combined. Reduce the heat to medium-low and cook for 5 minutes stirring occasionally. Serve with rice and enjoy.
