Barbecue Pulled Pork Nachos

Ingredients
  

  • Pulled pork (see below)
  • Barbecue sauce (see below)
  • 150g Tortilla chips
  • 1/4 Red onion (diced)
  • 50g Cheddar cheese (grated)
  • 50g Red Leicester cheese (grated)
  • 40g Pickled jalapenos

Garnish

  • 1 tsp Flat leaf parsley

Instructions
 

  • Heat grill to medium. Use leftover pulled pork and bottled barbecue sauce to your liking or follow my recipe https://livethequote.com/slow-cooker-barbecue-pulled-pork-sandwich/ to make your own from scratch and add the pulled pork and barbecue sauce to a small saucepan and warm on low for 5 minutes, stirring frequently.
  • Place the tortilla chips in a large dish and spread evenly. Top with the barbecue pulled pork, red onions, cheese and jalapenos.
  • Place under the grill and cook for around 5 minutes until the cheese has melted. Top with parsley and enjoy.
