Ingredients
  

  • 1 Chicken breast
  • BBQ sauce* (to your liking)
  • 2 Burger buns
  • 1 Lettuce leaf (shredded)
  • 1/4 Red onion (sliced)
  • 100g Grated cheese (I used cheddar)
  • Crispy onions*

Instructions
 

  • Preheat your grill to medium-high. Toast the burger buns to your liking. Meanwhile, add the chicken breast to a small saucepan and add cold water until just covered. Bring to a boil and then reduce the heat to medium and cook for around 10 minutes, until the chicken is just cooked through. Drain the water and shred the chicken with two forks.
  • Add BBQ sauce to the chicken, to your liking (you can make your own here if you like) and warm through for a minute, stirring until the chicken is evenly coated.
  • Add the lettuce and red onion to the bottom of each bun. Top with the BBQ pulled chicken and then the grated cheese. Cook under the grill for 2-4 minutes until the cheese is melted to how you like it. Top with crispy onions (you can make your own if you like here), add the burger lid, serve and enjoy.
