How to Make Easy Homemade Banana Pancakes

Fluffy banana pancakes topped with fresh banana and caramel sauce.

Ingredients
  

  • 350g Self-raising flour
  • 1 tsp Baking powder
  • 2 Bananas (ripe)
  • 2 Eggs (medium)
  • 1 tsp Vanilla extract
  • 250ml Milk
  • 4 tbsp Butter

Garnish

  • 4 tbsp Caramel sauce
  • 1 Banana (sliced)

Instructions
 

  • Mix the flour, baking powder, bananas and a pinch of salt together in a mixing bowl. Make a well in the centre and add the eggs, vanilla extract and milk. Whisk until a smooth batter is formed and pour into a jug.
  • Heat the butter in a large frying pan to medium heat. Pour a little of the batter mixture into the centre of the pan until it forms a small round pancake shape to your liking (around 8cm wide). Cook until bubbles appear on the surface of the pancake (around 1-2 minutes) and flip to cook for the same amount of time on the other side (until golden brown). Continue this process with the rest of the pancake batter and add the rest of the oil and butter when half the mixture has been used (to avoid the rest of the pancakes sticking).
  • Warm the caramel sauce in a microwave for 30 seconds and stir to loosen up. Spread across the top of each of the pancakes and stack on top of each other. Add bananas to the top of the stack and enjoy.
