How to Make the Perfect Beef Bourguignon

Beef bourguignon with carrots, mushrooms, onions and a rich red wine gravy.

Ingredients
  

  • 1 tbsp Olive oil
  • 400g Lean diced beef
  • 2 Garlic cloves (crushed)
  • 250g Pearl onions
  • 250g Button mushrooms
  • 3 Large carrots (chopped)
  • 400ml Red wine
  • 350ml Beef stock
  • 1 tbsp Dried thyme
  • 2 tbsp Tomato puree
  • 3 tbsp Cornflour
  • Fresh parsley (to serve)

Instructions
 

  • Heat the oil to medium-high in a large pan and add the beef. Cook for 2-3 minutes browning the meat on all sides. Remove from the pan.
  • Add the garlic, onions, mushrooms and carrots and cook for 4-5 minutes, stirring frequently. Add the beef back into the pan. Add the red wine to the pan and cook for a few minutes stirring frequently. Add the beef stock, dried thyme and tomato puree. Season with salt and pepper to taste.
  • Add to the slow cooker and cook on high for 3 hours (or on low for 6 hours). 5 minutes before the end of the cooking time add the cornflour to a small bowl and use 6 tbsp of the stock from the slow cooker to add to the bowl. Whisk until well combined and add back into the slow cooker gravy. Stir until well combined. Serve with mash potato and extra vegetables of your choice, or warm crusty bread. Top with fresh parsley and enjoy.
