Ingredients
  

Firecracker Sauce

  • 1 tbsp Mirin
  • 1 tbsp Sake
  • 6 tbsp Light soy sauce
  • 1 tsp Sugar
  • 50ml Oyster sauce
  • 100ml Sriracha
  • 2 tbsp Fish sauce
  • 50ml Vegetable oil
  • 2 tbsp Chilli flakes
  • 6 tbsp Honey

Ingredients

  • 1 tbsp Olive oil
  • 2 Chicken breasts (cut into chunks)
  • Ginger (thumb-sized piece grated)
  • 2 Garlic cloves (crushed)
  • 1 Red pepper (cut into chunks)
  • 1 Green pepper (cut into chunks)
  • 1 Onion (cut into small wedges)
  • 2 Spring onions (chopped)
  • 80g Mangetout
  • 1 Red chilli (sliced)

To Serve

  • 1 tbsp Sesame seeds
  • 2 Spring onions (chopped)
  • Rice

Instructions
 

  • Place all the firecracker sauce ingredients into a small saucepan over medium heat. Bring to the boil and then reduce the heat to simmer. Cook for 15 minutes stirring frequently, until the sauce thickens and is syrupy.
  • Meanwhile, heat the oil to medium-high in a wok or large frying pan. Add the chicken and cook for 5-8 minutes until browned. Add the ginger and garlic and cook for 1-2 minutes. Add the vegetables and chilli and cook for 2-3 minutes.
  • Add the firecracker sauce, and turn the heat down to low. Simmer for a couple of minutes until warmed through. Divide the firecracker chicken between two plates and surround it with rice. Sprinkle the sesame seeds over the top, add the spring onions and enjoy.
