Ultimate Comfort: Barbecue Pulled Pork Loaded Fries

Barbecue pulled pork loaded fries, topped with salsa, sour cream, spring onions, onion, jalapenos and spicy cheese.

Ingredients
  

  • 500ml Sunflower oil
  • 500g Potatoes (cut into fries)
  • 250g Pulled pork (see below)
  • 1 Cup Barbecue sauce (see below)
  • 2 tbsp Salsa
  • 2 tbsp Sour cream
  • 2 Spring onions (sliced into rounds)
  • 1/2 Onion (cut into small dices)
  • 50g Jalapenos
  • 150g Spicy grated cheese
  • Parsley (to serve)

Instructions
 

  • Preheat oven to gas mark 5/190℃/375℉. Heat the oil to medium in a large pan. Add the fries and cook for 10-15 minutes until golden brown. Remove from the oil and place on paper towels to remove excess oil, season with salt to taste.
  • Meanwhile warm through the pulled pork and barbecue sauce, in a small pan, on a low heat, stirring frequently. (You can use leftover pulled pork and bottled barbecue sauce or follow my recipe Slow Cooker Barbecue Pulled Pork Sandwich if you want to make them both from scratch).
  • Transfer the fries to an oven proof dish and top with the barbecue pulled pork, salsa, sour cream, spring onion, onion, jalapenos and spicy grated cheese. Cook for 1-2 minutes until the cheese has melted. Sprinkle with parsley and serve.
